Cranberry Oatmeal Cookies

Oatmeal Cranberry Cookies (Vegan | Gluten-Free)

These crunchy and soft vegan oatmeal cookies pair perfectly with the sweet and sour cranberries that go in it. There's nothing like a texture and flavor explosion like this one. With all clean and nutritious ingredients, you can enjoy these treats all day long.


  • ½ cup oat flour
  • 1 ¼ cups rolled oats
  • ½ teaspoon baking powder 
  • ½ teaspoon ground cinnamon 
  • ¼ teaspoon ground nutmeg 
  • ⅛ teaspoon cardamom 
  • ¼ teaspoon salt
  • ¼ cup melted coconut oil
  • ¼ cup + 1 tablespoon coconut sugar
  • 1 flax egg
  • 1 teaspoon date syrup 
  • ½ cup dried cranberries 


  1. Preheat oven to 350 degrees F and line a baking sheet. In a large bowl, whisk together all the dry ingredients 
  2. In another bowl, whisk together all the wet ingredients. Pour the wet mixture over the dry mixture, stir until well mixed, then fold in cranberries
  3. Using a spoon, scoop into cookie dough balls and place them evenly on the baking sheet
  4. Bake for 12-16 minutes, then allow to cool for at least 10 minutes to an hour
