Ingredients
- ½ cup oat flour
- 1 ¼ cups rolled oats
- ½ teaspoon baking powder
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ⅛ teaspoon cardamom
- ¼ teaspoon salt
- ¼ cup melted coconut oil
- ¼ cup + 1 tablespoon coconut sugar
- 1 flax egg
- 1 teaspoon date syrup
- ½ cup dried cranberries
Instructions
- Preheat oven to 350 degrees F and line a baking sheet. In a large bowl, whisk together all the dry ingredients
- In another bowl, whisk together all the wet ingredients. Pour the wet mixture over the dry mixture, stir until well mixed, then fold in cranberries
- Using a spoon, scoop into cookie dough balls and place them evenly on the baking sheet
- Bake for 12-16 minutes, then allow to cool for at least 10 minutes to an hour
