Vegan Bread Pudding (Gluten-Free)

This vegan bread pudding is ready to blow your socks off with its deliciously sweet and fluffy flavors. Not only is it the perfect way to use up your stale bread, but it creates a healthy dessert for everyone to enjoy. Made with any vegan nut milk you prefer and nutrient packed flaxseed meal, this recipe is setting you up for success! Try it topped with our coconut whipped cream and you’ll be in heaven. Ingredients

  • 1 pound stale gluten-free bread, cut into cubes
  • 3 cups nut milk 
  • ¾ cup coconut sugar
  • ¼ cup flaxseed meal
  • 1 tablespoon coconut oil
  • ½ teaspoon ground cinnamon

Instructions 

  1. Place the bread cubes in a large mixing bowl. Blend all other ingredients until smooth 
  2. Pour the mixture over the bread, stir, and set aside for an hour at room temperature 
  3. Preheat oven to 250 degrees F and grease a 9x9 inch baking dish
  4. Pour pudding mixture into the baking dish and bake for 60-70 minutes
