Ingredients
- 1 pound stale gluten-free bread, cut into cubes
- 3 cups nut milk
- ¾ cup coconut sugar
- ¼ cup flaxseed meal
- 1 tablespoon coconut oil
- ½ teaspoon ground cinnamon
Instructions
- Place the bread cubes in a large mixing bowl. Blend all other ingredients until smooth
- Pour the mixture over the bread, stir, and set aside for an hour at room temperature
- Preheat oven to 250 degrees F and grease a 9x9 inch baking dish
- Pour pudding mixture into the baking dish and bake for 60-70 minutes
