Spiced Chia Pudding (Vegan | Gluten Free)

Indulge in the perfect breakfast for a snug winter morning with this chia seed pudding featuring cinnamon, cardamom, and vanilla. Simply prepare the mixture the night before, and wake up to the wholesome goodness of chia.
(serves 2)
Ingredients
  • 2 Tbsp chia seeds*
  • 1 Tbsp raisins
  • 1 C Nut Milk
  • 1/2 Tbsp cinnamon
  • 1/2 tsp cardamom
  • 1/2 tsp vanilla extract 
  • 1 Tbsp coconut sugar (optional)
  • Berries or other fresh fruits to put on top 
*you can go up to 3 Tbsp of chia if you like it more chia heavy! 

Instructions
1. Mix together nut milk, spices, vanilla and coconut sugar in a blender or with a whisk.
2. Put chia seeds and raisins in a bowl or jar, and top with nut milk.
3. Stir together, then put in fridge overnight. If you are trying to make to eat the same day, 20-30 minutes is enough time. 
4. Stir and top with fresh fruit.
