Zucchini Cacao Brownies (vegan | gluten-free)

We are obsessed with these vegan, gluten-free brownies. And we promise, they don't taste like zucchini. Once we made these brownies for the first time, they instantly became part of our regular recipe rotation. We've also found these are a great way to get our kids to eat their greens while still satisfying their sweet tooth. A treat for both kids and parents.


  • 1 1/4 cup zucchini
  • 3/4 cup of coconut sugar
  • 1 1/2 cups of rolled oats
  • 1/2 cup raisins
  • 1/2 cup cacao powder
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/3 tsp salt
  • 1/3 cup almond butter
  • 1/4 cup nut milk
Zucchini Cacao Brownies (vegan | gluten-free)


  1. Preheat oven to 350 degrees F and line a 6x9 load pan with parchment paper
  2. Add all dry ingredients to food processor and blend
  3. The add wet ingredients and blend until smooth
  4. Add raisins and add to loaf (can add more raisins on top)
  5. Bake for 35-45 minutes (if toothpick comes to clean)
