These vegan zucchini fritters are a delicious and healthy way to get your daily vegetables. They're also such a simple and easy recipe that everyone will be excited about making them. Ingredients
- 3 and ½ cups (490g) grated zucchini measured/weighed before squeezing out excess water
- 1 tsp salt
- 1 cup almond flour
- ¼ cup nutritional yeast
- 1 ½ tsp baking powder
- ½ tsp garlic powder
- 1/2 tsp onion powder
- ¼ cup coconut oil
Instructions

Grate the zucchini and then add it to a mixing bowl. Sprinkle over the salt and mix in. Then leave it for 10 minutes (salt releases extra water). Then use your hands to squeeze the zucchini and drain off excess water. Place the squeezed zucchini into another bowl and leave the water behind.

Add in the almond flour, nutritional yeast, baking powder, garlic powder & onion powder and mix together.

Add in the melted coconut oil and mix into a thick batter.

Preheat the oven to 400 F and place some parchment paper on a baking sheet. Scoop ¼ cup for each fritter and place it on the sheet. Use your spatula to press it down from the top and flatten.

Put fritters in the oven for 20 minutes and then flip them over and bake for another 10-15 minutes (until desired tenderness).
