Ingredients
- 1 ¼ cup cashews (soaked in water for 30 minutes and drained/rinsed before using)
- 1 cup nut milk (you can also use water)
- ¼ cup nutritional yeast
- 3 tablespoons lemon juice
- ½ teaspoon garlic powder
- 1 tablespoons rice flour
- 1 ½ teaspoon salt
- 1 teaspoon onion powder
- 1 onion, diced
- 1 jar (8 oz) marinated artichokes, roughly chopped
- 4 cups spinach
Instructions
- Preheat oven to 375 degrees F and lightly grease casserole dish. Combine the soaked cashews, nut milk, nutritional yeast, lemon juice, garlic powder, rice flour, salt, and onion powder in a high speed blender fr 3-5 minutes
- Meanwhile, heat a medium sauce pan over medium heat and add a tablespoon of olive oil, add the onion and cook for a minute
- Add chopped artichoke hearts and cook for 2-3 minutes, until lightly browned. Add spinach and toss till the spinach is wilted
- Pour the cashew sauce over and stir to combine, sauce should thicken slightly. Transfer dip into prepared casserole dish and bake for 8-10 minutes
