Vegan Spinach Artichoke Dip

Vegan Spinach Artichoke Dip

This creamy and warm dip will blow your mind and expand your taste buds. It is completely vegan and extra delicious. Try it at your next gathering or party!

Ingredients 

  • 1 ¼ cup cashews (soaked in water for 30 minutes and drained/rinsed before using)
  • 1 cup nut milk (you can also use water)
  • ¼ cup nutritional yeast
  • 3 tablespoons lemon juice 
  • ½ teaspoon garlic powder
  • 1 tablespoons rice flour
  • 1 ½ teaspoon salt 
  • 1 teaspoon onion powder 
  • 1 onion, diced
  • 1 jar (8 oz) marinated artichokes, roughly chopped
  • 4 cups spinach 

Instructions 

  1. Preheat oven to 375 degrees F and lightly grease casserole dish. Combine the soaked cashews, nut milk, nutritional yeast, lemon juice, garlic powder, rice flour, salt, and onion powder in a high speed blender fr 3-5 minutes
  2. Meanwhile, heat a medium sauce pan over medium heat and add a tablespoon of olive oil, add the onion and cook for a minute 
  3. Add chopped artichoke hearts and cook for 2-3 minutes, until lightly browned. Add spinach and toss till the spinach is wilted 
  4. Pour the cashew sauce over and stir to combine, sauce should thicken slightly. Transfer dip into prepared casserole dish and bake for 8-10 minutes
