Veggie Peel Crisps

You will never have vegetable waste again with this super delicious recipe. You are doing good for the planet by creating less food waste, and you are doing good for your body because these chips are delicious and good for you too. Try out these amazingly seasoned chips the next time you have extra vegetable scraps in your kitchen.


  • Approx. 1 ½ pounds of left-over vegetable peelings (potatoes, carrots, parsnips, beets etc.)
  • 3 tablespoons olive oil
  • ½ teaspoon salt 
  • ¼ teaspoon ground turmeric 
  • ½ teaspoon ground cumin 
  • ½ teaspoon ground coriander
  • ½ teaspoon chili flakes
  • ¼ teaspoon coconut sugar


  1. Heat oven to 350 degrees F
  2. Toss your vegetable peelings onto a baking pan and sprinkle with olive oil, bake for 20-25 minutes until really crispy 
  3. Mix together all the dry seasonings 
  4. Once the peelings are ready, place them into a bowl and sprinkle with the seasoning mixture
