This Vegan "Meat"loaf is a plant-based masterpiece that brings together the wholesome goodness of lentils and chickpeas, the hearty texture of oats, and the nutty richness of hemp hearts. This simple recipe combines fresh vegetables, aromatic spices, and BBQ sauce to create a hearty and flavorful dish.

- 2 stalks of celery
- 1 carrot
- 1/2 onion
- 2 cloves garlic
Pantry Goods
- 1 Cup Lentils, cooked
- 1 Cup chickpeas, cooked
- 1/2 C Oats
- 2 Tbsp Hemp Hearts
Spices, Sauces and Oils
- 1 Cup BBQ Sauce
- 1/4 tsp thyme
- 1/4 tsp oregano
- 1/2 tsp basil
- Olive oil
- Salt
Instructions
1. Preheat oven to 350. Ensure lentils and chickpeas are cooked.
2. Rough chop / pulse celery, carrot, onion, and garlic in a food processor.
2. Sautee veggies in olive oil with salt to taste, until veggies are soft
3. Combine sauteed veggie mixture, lentils, chickpeas, oats, hemp hearts, 1 Tbsp BBQ sauce, and spices (thyme, oregano, and basil) in a food processor. Rough chop / pulse (targeting consistency of a meatloaf; you don't want to mix to a paste)
4. Put into a parchment lined loaf pan, cover with aluminum foil, and bake for 35 minutes at 350.
5. Uncover and brush top with the remaining BBQ sauce, and bake for another 10 minutes
