Vegan Chickpea Blondies

Ever heard of creating a dessert out of chickpeas? Here is something new that you can try that will blow your mind! Packed with healthy and clean ingredients, these blondies are ooey gooey and oh so delicious! These delicious blondies were inspired by the Elavegan blog - and amazing vegan recipe blog with so many fun recipes!


Wet ingredients 

  • 1 ½ cups of chickpeas
  • ½ cup nut milk
  • ½ tablespoon apple cider vinegar 
  • ⅓ cup almond butter
  • 2 teaspoons vanilla extract 

Dry ingredients

  • ½ cup coconut sugar
  • ¾ cup almond flour
  • 4 tablespoons ground flax seeds
  • ¾ teaspoons baking power
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt


  1. Preheat oven to 360 degrees F and line your baking pan (about 9”x6”)
  2. Blend all wet ingredients in a blender or food processor until smooth 
  3. Add all dry ingredients and mix again 
  4. Put your batter into the baking pan and bake for 25-35 minutes (depending on the size of your dish)
