These 3-ingredient chocolate truffles are the perfect healthy treat. Made with only dates, cacao powder, and coconut oil, these chocolate truffles are rich, decadent, and delicious.
Ingredients
- 7 Medjool dates, pitted
- 3 tablespoons cacao powder
- 2 tablespoons coconut oil, melted*
Makes about 10 truffles
Toppings (optional):
- cacao powder
- coconut shreds
- almond butter drizzle
Instructions
- Soak dates in hot water for 5-10 minutes, until soft, then drain.
- Combine dates, cacao powder, and coconut oil in a food processor. Mix until smooth - you may need to scrape down sides with a food processor a few times. Don't worry if there's still some small chunks of dates remaining, that will just give your truffles a little texture!
- Portion out using a teaspoon and place on a plate. Put in freezer for 5-10 minutes to solidify. Remove and roll into balls.
- Store in fridge until ready to serve. If adding toppings, wait to add them until you're ready to serve.
*A note about coconut oil: You can use refined or unrefined coconut oil. Unrefined is our preference as it's less processed, but it has a stronger coconut flavor, so it makes these truffles more coconut forward. If you prefer less coconut flavor, use refined.
