Happy Halloween Eve! For those of you planning to carve pumpkins, hold on to the 'guts' and seeds... we have two tasty recipes to help make the most of your pumpkin! Both recipes are super simple to prepare and made with less than 5 ingredients: just the way we like it!
PUMPKIN SPREAD:
Think applesauce consistency...but with that delicious pumpkin flavor!
Ingredients:
- 2 C pumpkin ‘guts’ (with seeds remove)
- 1/2 C water
- 1/2 C coconut sugar
- 1 tsp pumpkin spice seasoning
Put pumpkin and water in blender. Blend until pureed, then add coconut sugar and pumpkin seasoning and finish blending.
We layered our pumpkin spread with cashew yogurt as a parfait, but you can use this in many other ways! Eat it with a spoon like applesauce, add it to a smoothie, use it as veggie dip or a toast topper.
ROASTED PUMPKIN SEEDS:
A crunchy treat to satisfy salty cravings
Ingredients:
- Pumpkin seeds
- Olive oil
- Sea salt
- Smoked paprika (or whatever other spice you prefer)
Instructions:
Rinse seeds thoroughly under water in a strainer to clean. It’s okay if there is still some ‘guts’ remaining on them when you roast them. Toss clean seeds with avocado oil, sea salt, and other seasoning.
Roast at 300 degrees for 45 minutes. Check seeds at 45 minutes, and leave in for an additional 15-30 minutes if needed to make them crunchy.
