Savory Pumpkin Soup (Vegan | Gluten-Free)

This super simple fall soup will be a total hit at any dinner table this season. There’s nothing like a warm soup for the chilly weather and all you have to do is cook, blend, and enjoy.   • 2 teaspoon olive oil
  • 1 shallot, diced
  • ½ teaspoon garlic powder
  • 1 ½ cups pumpkin puree
  • 1 cup vegetable stock
  • nut milk
  • 1 tablespoon ground cumin
  • 1 teaspoon chili flakes
  • Salt and pepper to taste 


  1. Over medium heat, add olive oil, shallot, and garlic to a medium saucepan, sautee for 2-3 minutes
  2. Stir in remaining ingredients and cook at a simmer
  3. If you’d like, blend soup for a creamier texture, then allow to simmer for 5 more minutes
