Ingredients
- 2 teaspoon olive oil
- 1 shallot, diced
- ½ teaspoon garlic powder
- 1 ½ cups pumpkin puree
- 1 cup vegetable stock
- ⅔ nut milk
- 1 tablespoon ground cumin
- 1 teaspoon chili flakes
- Salt and pepper to taste
Instructions
- Over medium heat, add olive oil, shallot, and garlic to a medium saucepan, sautee for 2-3 minutes
- Stir in remaining ingredients and cook at a simmer
- If you’d like, blend soup for a creamier texture, then allow to simmer for 5 more minutes
