1-Bowl Pumpkin Muffins (Vegan | Gluten Free)

These pumpkin muffins are fall in a single bite! Enjoy as a nutritious breakfast on-the-go or as a delicious, healthy treat. 

Ingredients (makes 12)

  • 2 cups oats 
  • 1 cup pumpkin puree 
  • 3/4 cup dare syrup
  • 1/3 cup melted coconut oil
  • 4 teaspoons pumpkin pie spice
  • 2 teaspoons baking powder
  • 1/4 teaspoon fine seal salt
  • 1/4 cup raisins 
  • 1/4 cup vegan chocolate chips 

Instructions

1. Preheat the oven to 350 degrees

2. In a large bowl combine all the ingredients and whisk until smooth, and then scoop pumpkin mixture into the 12 lined muffin tins.

4. Bake for 20 to 25 minutes.
