This sweet, nutritious treat is one of our favorites this season. A twist on a classic banana bread, the added flavor of pumpkin compliments this dessert perfectly. Another recipe that is so nice to snack on because it is filled with refined sugar-free, vegan, and gluten-free ingredients. You can enjoy satisfying your sweet tooth, and make something that everyone can enjoy and feel good about munchin'!
Ingredients
- 1 cup mashed bananas, ripe
- 1 ¼ cup pumpkin puree
- ⅓ cup melted coconut oil
- ½ cup coconut sugar
- 1 ½ teaspoon pumpkin spice (check out our recipe!)
- 1 ½ cup almond meal
- ¼ teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
Instructions
- Preheat oven to 350 degrees F and line 9x5 inch loaf pan with paper and cooking spray. Peel and mash the bananas, then measure the amount you need (1 cup)
- In a large bowl, stir together the banana, pumpkin puree, coconut oil, and sugar
- In another bowl, combine the rest of the dry ingredients. Stir the dry ingredients into the wet ingredients, until just combined
- Pour the batter evenly into the load pan and bake for 40-50 minutes
