- 1 plantain
- 2 teaspoons olive oil
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
- Preheat oven to 375 degrees F. Peel and slice the plantain and toss them with oil in a mixing bowl
- Place slices on a lined baking tray and bake for 25 min on one side, then 5-10 min on the other side
- Add salt and pepper and stir till well combined
