Ingredients
- 6 tablespoons coconut oil
- ¼ cup & 2 tablespoons almond butter
- ¼ cup & 1 tablespoon date syrup
- ¼ cup cacao powder
- 1 pinch salt
- 1 cup rolled oats
Instructions
- Place 9 cupcake liners into a muffin tin. In a small saucepan, melt 5 tablespoons coconut oil over low heat
- Mix in 2 tablespoons almond butter, ¼ cup date syrup, ¼ cup cacao powder, and 1 pinch salt, once fully combined remove from heat and stir in 1 cup rolled oats
- Spoon into cupcake liners and refrigerate. For the almond butter topping: In a small saucepan, stir together ¼ cup peanut butter, 1 tablespoon date syrup, and 1 tablespoon coconut oil over low heat
- Spoon the warm peanut butter mixture over the chocolate oat mixture and freeze for 15-20 minutes; store refrigerated
