Creamy Garlic Hummus

Ingredients

    • ½ cup garbanzo beans
    • Water
    • 3/4 teaspoon garlic powder
    • 1 bay leaf
    • ¼ cup extra virgin olive oil
    • 1 small radish (for garnishing)
    • Wild radish flowers (for garnishing)

Instructions

  1. Soak garbanzo beans in water overnight
  2. Add rinsed and drain garbanzo beans to a pot
  3. Add enough water to pot to cover garbanzo beans about 1-2 inches
  4. Add salt, peeled whole garlic cloves, and bay leaf to pot
  5. Bring to a boil, cover, and reduce heat to simmer
  6. Cook with lid slightly ajar for 1 ½ hours or until garbanzo beans are fork tender
  7. Once cooked, remove bay leaf and drain nearly all water from pot, reserving ¼ cup
  8. Transfer cooked garbanzo beans, garlic, and reserved water to blender or food processor
  9. Add olive oil and blend until smooth
  10. Transfer to serving bowl and garnish with thinly sliced radish, wild radish flowers, and drizzle of olive oil
