Ingredients
- ¼ cup coconut flour
- ½ cup toasted coconut butter
- 4 tablespoons date syrup
- ½ cup chocolate chips
- 1 tablespoon coconut shreds
Instructions
- Add coconut flour, toasted coconut butter, and date syrup to a food processor- pulse until crumbles form (so that balls can form)
- Line tray with parchment paper. Scoop a tablespoon of the mixture, flattening it against the food processor, and tightly pack mixture into the spoon (so it looks like an egg!)
- Slide the egg out and onto the tray, and repeat. Put the tray in the freezer for at least 10 min
- Melt chocolate chips in a bowl in 30 second increments in the microwave, stirring in between. Drop and fully coat each egg in the melted chocolate, shake off excess and sprinkle with coconut shreds
- Place back in the freezer for at least 10 more minutes
