Chocolate Berry Bars

These chocolate berry bars are one of our absolute favorites! The coconut chocolate mixed with your choice of fruit and combined with the lightly sweetened almond flour crust is irresistible. And the best part, they are gluten-free, vegan, refined sugar-free, and Paleo so it fits everyone's needs without giving up a delicious and fresh flavor. (Photo & recipe inspo by: Bakerita)


Ingredients 

For the bar base:

  • 1 cup almond flour
  • 1 teaspoon coconut flour 
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 tablespoons coconut sugar
  • ¼ cup coconut oil (melted)
  • 2 tablespoons date syrup

For the chocolate layer:

  • ½ canned coconut milk (full fat)
  • 5 oz. bittersweet chocolate (finely chopped)
  • 1 cup assorted fresh berries 

Instructions

  1. Preheat oven to 350 degrees F and line a 8x8 inch pan. In a large bowl, whisk together almond flour, coconut flour, baking soda, salt, and coconut sugar
  2. Add coconut oil and date syrup and mix until it sticks together. Press the crumb mixture evenly into the bottom of the greased pan and bake for 11-13 minutes
  3. While this is baking, place finely chopped chocolate in a large bowl. In a small saucepan bring coconut milk to a boil and pour the mixture over the chocolate, let stand for 1 minute and then stir until smooth 
  4. Pour warm chocolate mixture over the cooled crust and arrange berries on top, chill for at least an hour
