Makes 10 muffins
Ingredients
2 eggs
1 c. Grated carrot
1/2 c. Date Syrup
1/4 c. Melted coconut oil or ghee
1/3 c. Almond milk
1 tsp. Vanilla
1 c. Oats
1/2 c. Almond flour, Cashew flour, or other gluten free flour of choice
1 tsp. Baking soda
1/2 tsp. Salt
1 tsp. each Cinnamon, ginger, and cloves
instructions
1. Preheat the oven to 350.

instructions
1. Preheat the oven to 350.
2. Mix together all the ingredients in a large bowl, and whisk until well combined.
3. Spoonful batter into a greased muffin tin. Bake for 20-25 minutes. Let them sit in the muffin tin for a few minutes before transferring them to a cooling rack.
4. Enjoy with butter, honey, or almond butter smothered on top!
