3-Ingredient Almond Flour Cookies

3-ingredient Almond Flour Cookies (Vegan, Gluten-Free)

These are the simplest, yet most flavor packed cookies you can find. No refined sugar, no hassle, yet all the sweetness you need in just a few easy steps. Having these few ingredients in your pantry will ensure that you always have a tasty treat to satisfy your sweet tooth!


  • 1 ½ cups almonds
  • ⅛ teaspoon sea salt
  • ¼ cup date syrup or maple syrup 


  1. Preheat the oven to 350 degrees F and line a baking sheet
  2. Put almonds into food processor and grind into almond meal consistency 
  3. Add in sea salt and syrup; blend until combined  
  4. Scoop a slightly rounded tablespoon of dough per cookie and place on cookie sheet with room between to flatten. Make sure size of cookies is even. 
  5. Flatten cookies to about ¼ inch thickness by using a small piece of parchment paper and a flat object to prevent sticking 
  6. Bake for 8-12 minutes. Keep a close eye and be careful not to burn!
