Healthy Homemade Granola Bars

Granola bars are such a great to-go snack! However, the plastic wrappers are not so great. We are so excited to share an amazing recipe created by our friend @magdaroni. This simple granola bar recipe not only helps you ditch the plastic packaging, but also avoids the added sugars and artificial ingredients that are too often hidden in granola bars. As the Holidays come around, these bars can be a great low waste gift idea for loved ones! 

We love these bars because we know exactly what ingredients are in them..whole real foods without any weird ingredients we can't pronounce. These healthy bars 

Ingredients

  • 2 flax eggs (2 Tbsp ground flaxseed mixed with 4 Tbsp warm water)
  • 1 cup soft medjool dates (soften by soaking dates in warm water for 15 minutes)
  • 1 1/4 cup gluten free oats (blend 1/4 cup into an oat flour)
  • 1 cup soaked nuts (we used 1/3 cup walnut, 1/3 pumpkin seeds, 1/3 sunflower seeds)
  • 1/3 cup almond butter or other nut butter
  • 1/4 cup date syrup or maple syrup
  • 1-2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • handful of goji berries (or other dried fruit)

Instructions

  1. Combine nut butter, vanilla extract, and date or maple syrup in a small saucepan over medium-low to medium heat to evenly blend wet ingredients
  2. Pour mixture into a food processor with softened dates (leave behind the water they were soaking in) and blend together
  3. In a mixing bowl, combine dry ingredients (nuts, oats, cinnamon, and handful of dried fruit)
  4. Mix in the wet ingredients (flax egg and nut butter/syrup/vanilla mixture into dry mixture)
  5. Spread granola bar mixture evenly and tightly packed into a pan (8" x 8" or whatever you got!) lined with unbleached parchment paper
  6. Bake at 350°F for 20 minutes 
  7. Freeze/refrigerate to harden enough to cleanly cut into bars
