Paleo Pumpkin Banana Bread (Vegan | Gluten-Free)

This sweet, nutritious treat is one of our fall favorites this season. A twist on a classic banana bread, the added flavor of pumpkin compliments this dessert perfectly. Another recipe that is so nice to snack on because it is filled with refined sugar-free, vegan, and gluten-free ingredients. You can enjoy satisfying your sweet tooth, and make something that everyone can enjoy and feel good about munchin'! 

Ingredients 

  • 1 cup mashed bananas, ripe
  • 1 ¼ cup pumpkin puree
  • ⅓ cup melted coconut oil
  • ½ cup coconut sugar
  • 1 ½ teaspoon pumpkin spice (check out our recipe!)
  • 1 ½ cup almond meal 
  • ¼ teaspoon salt 
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder

Instructions 

  1. Preheat oven to 350 degrees F and line 9x5 inch loaf pan with paper and cooking spray. Peel and mash the bananas, then measure the amount you need (1 cup)
  2. In a large bowl, stir together the banana, pumpkin puree, coconut oil, and sugar
  3. In another bowl, combine the rest of the dry ingredients. Stir the dry ingredients into the wet ingredients, until just combined 
  4. Pour the batter evenly into the load pan and bake for 40-50 minutes
