3-ingredient Almond Flour Cookies (Vegan, Gluten-Free)

  1. Preheat the oven to 350 degrees F and line a baking sheet
  2. Whisk together almond meal and salt in a medium bowl 
  3. Add date syrup until combined (moist yet rumbly)
  4. Scoop a slightly rounded tablespoon of dough per cookie and place on cookie sheet about 2 ½ inches apart 
  5. Flatten cookies to about ¼ inch thickness by using a small piece of parchment paper and a flat object to prevent sticking 
  6. Bake for 10-12 minutes
