The Perfect Holiday Recipe: Pumpkin Cashew Dip
With the holiday season officially in swing, I’m sure your month is jam-packed with dinners and events filled with foods that make clean eating difficult. It’s hard to find holiday recipes that are easy to make, healthy, and yet tasty enough for even your unhealthiest relatives.
While taking an amazing cooking class we found the solution to this problem thanks to our friend Michelle at Farmbelly Cooking School - this super simple, super tasty dip. With a base made from one of our favorite ingredients, cashews, you can pair it with any side and still feel great.
You can follow Michelle’s amazing recipe step by step below:
PUMPKIN CASHEW DIP
1 cup raw cashews, soaked for 1-2 hours in hot water
1 cup pumpkin purée or roasted pumpkin flesh
1 clove garlic
3 tablespoons coconut oil
2 tablespoons maple syrup
3 tablespoons orange juice
1/2 teaspoon orange zest
1 teaspoon pumpkin pie spice
1 teaspoon vanilla extract
1/2 teaspoon kosher salt
Pinch cayenne pepper
Pumpkin seeds (optional garnish)
Drain the cashews and add to the bowl of the food processor, along with all of the remaining ingredients.
Blend until mixture is smooth and creamy. Taste and adjust seasoning as needed. If consistency is too thick, add more coconut oil, orange juice, or water.
Garnish with pumpkin seeds and enjoy!
